On January 7, Frontier Science and Social Co-creation Initiative conducted the second Sake brewing tour to Noguchi Naohiko Sake Institute Inc. as part of Project: AERU (※). 8 students, faculty and staff from Kanazawa University participated in the tour.
The Noguchi Naohiko Sake Institute Inc. was established in Komatsu City, Ishikawa Prefecture, in November 2017 to pass on to the next generation the sake brewing techniques and spirit of Mr. Naohiko Noguchi, who is regarded as Japan's greatest master brewer.
First, participants visited the sake brewery at the peak of its production season, and Mr. Takashi Iwai, director of the institute, explained the sake brewing process and the production status of Kanazawa University original sake, which was developed in collaboration with Noguchi Naohiko Sake Institute Inc. Following the tour, participants listened to Mr. Noguchi's thoughts on sake brewing and his persistence as a craftsman, and tasted some freshly pressed sake.
Participatipants commented that they could sense the seriousness of the sake brewing process, and that it was a valuable experience for them to see the Koji making process.

With the aim of creating opportunities for students to "encounter and learn" with each other and with the local community, Kanazawa University is implementing educational programs (extracurricular) for Kanazawa University students.
